One pot chicken recipe for easy weeknight meal for busy working moms and dads on Maybrooks, a career resource for moms

1 full cut-up chicken or 4 thighs & 4 drumsticks
1 tsp Turmeric
1 tsp Paprika
1 tsp Cumin
1 tsp Salt
8-12 small potatoes cut in halves
8 carrots peeled, washed, cubed
1 onion chopped
2 Meyer Lemons 1 juiced 1 sliced
1/2 cup chicken broth
1 cup of green olives (no pitted)
4-6 cloves garlic
Salt & pepper to Taste


Preheat oven to 300 degrees
Heat oil in oven-safe skillet or dutch oven
Season chicken with mixture of turmeric, paprika, cumin and salt
Sear chicken until golden brown on both sides
Add onion, potatoes, carrots, lemon juice, cut lemon and garlic
Add broth and green olives, season with salt and pepper
Cover and place in oven for one hour
Enjoy with rice or baguette!
